Description

Coconut Cloud Cake is a light and airy tropical dessert layered with rich coconut flavor and creamy frosting, perfect for special occasions.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 cup coconut milk
  • 1 1/2 cups heavy whipping cream
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon coconut extract (for frosting)
  • 1 cup sweetened shredded coconut (toasted or fresh)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, and salt.
  3. In a large bowl, cream the butter and granulated sugar until light and fluffy (3–5 minutes).
  4. Add eggs one at a time, beating well after each. Mix in vanilla and coconut extracts.
  5. Gradually add the dry ingredients, alternating with coconut milk, beginning and ending with the dry ingredients. Mix until just combined.
  6. Divide batter evenly between prepared pans and bake for 25–30 minutes. A toothpick should come out clean or with moist crumbs. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting: beat cream cheese and powdered sugar until smooth. In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture. Add vanilla and coconut extracts.
  8. Place one cake layer on a plate. Spread frosting on top, then add the second layer and frost the top and sides.
  9. Cover the cake with shredded coconut. Chill in the fridge for at least 1 hour before serving.

Notes

  • Use gluten-free flour for a gluten-free version.
  • Add lime zest or pineapple juice for a flavor twist.
  • Make sure cakes are fully cool before frosting.
