- 2 1/2 cups all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 teaspoon coconut extract
- 1 cup coconut milk
- 1 1/2 cups heavy whipping cream
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract (for frosting)
- 1 teaspoon coconut extract (for frosting)
- 1 cup sweetened shredded coconut (toasted or fresh)
Instructions
- Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, cream the butter and granulated sugar until light and fluffy (3–5 minutes).
- Add eggs one at a time, beating well after each. Mix in vanilla and coconut extracts.
- Gradually add the dry ingredients, alternating with coconut milk, beginning and ending with the dry ingredients. Mix until just combined.
- Divide batter evenly between prepared pans and bake for 25–30 minutes. A toothpick should come out clean or with moist crumbs. Cool in pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting: beat cream cheese and powdered sugar until smooth. In a separate bowl, whip heavy cream to stiff peaks. Gently fold whipped cream into the cream cheese mixture. Add vanilla and coconut extracts.
- Place one cake layer on a plate. Spread frosting on top, then add the second layer and frost the top and sides.
- Cover the cake with shredded coconut. Chill in the fridge for at least 1 hour before serving.

- Use gluten-free flour for a gluten-free version.
- Add lime zest or pineapple juice for a flavor twist.
- Make sure cakes are fully cool before frosting.
