- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup shredded coconut (toasted for garnish)
- Whipped cream (for serving)
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, flour, sugar, baking powder, and salt. Mix well.
- In another bowl, beat the softened butter until creamy. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
- Using a tablespoon or cookie scoop, portion out the dough onto a baking sheet lined with parchment paper. Flatten each portion slightly.
- Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
- Once the cookies are completely cooled, take one cookie and scoop a generous amount of coconut ice cream onto the flat side. Top with another cookie.
- Roll the edges of each sandwich in the toasted shredded coconut.
- Freeze the assembled ice cream sandwiches for about 30 minutes before serving. Serve with whipped cream on the side.
