  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (toasted for garnish)
  • Whipped cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, flour, sugar, baking powder, and salt. Mix well.
  2. In another bowl, beat the softened butter until creamy. Add the egg and vanilla extract, mixing until well combined.
  3. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
  4. Using a tablespoon or cookie scoop, portion out the dough onto a baking sheet lined with parchment paper. Flatten each portion slightly.
  5. Bake in the preheated oven for about 10-12 minutes, or until the edges are golden brown. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
  6. Once the cookies are completely cooled, take one cookie and scoop a generous amount of coconut ice cream onto the flat side. Top with another cookie.
  7. Roll the edges of each sandwich in the toasted shredded coconut.
  8. Freeze the assembled ice cream sandwiches for about 30 minutes before serving. Serve with whipped cream on the side.
