Coconut Key Lime Cheesecake Bars are a tropical twist on a classic dessert, combining a buttery graham coconut crust with creamy key lime cheesecake and a toasted coconut topping.

- 1 1/4 cups finely ground graham cracker crumbs
- 1/2 cup unsweetened shredded coconut
- 6 tablespoons unsalted butter, melted
- 1/4 cup granulated sugar
- 1/4 teaspoon kosher salt
- 2 (8-oz.) blocks cream cheese, room temperature
- 1/3 cup granulated sugar
- 3 large eggs
- 1/2 cup coconut cream
- 1/3 cup fresh Key lime juice
- 1/4 teaspoon coconut extract
- 1/4 teaspoon kosher salt
- Whipped cream, for topping
- 1/2 cup toasted sweetened shredded coconut flakes
- Key lime zest and wheels, for serving
Instructions
- Preheat oven to 325°F (165°C). Grease and line a 9″ square baking pan with parchment paper, leaving overhang. Grease the parchment as well.
- In a bowl, mix graham cracker crumbs, shredded coconut, melted butter, granulated sugar, and kosher salt until sandy. Press into the prepared pan. Bake for 10–12 minutes until golden. Let cool.
- In a large bowl, beat cream cheese and 1/3 cup sugar with a mixer on medium speed until fluffy (about 2 minutes).
- Add eggs one at a time, mixing well after each. Then mix in coconut cream, Key lime juice, coconut extract, and kosher salt until smooth.
- Pour cheesecake filling over the cooled crust and smooth the top. Bake for 40–45 minutes until just set with a slight jiggle in the center.
- Let the cheesecake cool completely in the pan, then refrigerate for at least 2 hours until firm.
- Lift the cheesecake out using parchment, slice into bars, and top with whipped cream, toasted coconut flakes, lime zest, and lime wheels.
