Description

Coconut Key Lime Cheesecake Bars are a tropical twist on a classic dessert, combining a buttery graham coconut crust with creamy key lime cheesecake and a toasted coconut topping.

  • 1 1/4 cups finely ground graham cracker crumbs
  • 1/2 cup unsweetened shredded coconut
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 1/4 teaspoon kosher salt
  • 2 (8-oz.) blocks cream cheese, room temperature
  • 1/3 cup granulated sugar
  • 3 large eggs
  • 1/2 cup coconut cream
  • 1/3 cup fresh Key lime juice
  • 1/4 teaspoon coconut extract
  • 1/4 teaspoon kosher salt
  • Whipped cream, for topping
  • 1/2 cup toasted sweetened shredded coconut flakes
  • Key lime zest and wheels, for serving

Instructions

  1. Preheat oven to 325°F (165°C). Grease and line a 9″ square baking pan with parchment paper, leaving overhang. Grease the parchment as well.
  2. In a bowl, mix graham cracker crumbs, shredded coconut, melted butter, granulated sugar, and kosher salt until sandy. Press into the prepared pan. Bake for 10–12 minutes until golden. Let cool.
  3. In a large bowl, beat cream cheese and 1/3 cup sugar with a mixer on medium speed until fluffy (about 2 minutes).
  4. Add eggs one at a time, mixing well after each. Then mix in coconut cream, Key lime juice, coconut extract, and kosher salt until smooth.
  5. Pour cheesecake filling over the cooled crust and smooth the top. Bake for 40–45 minutes until just set with a slight jiggle in the center.
  6. Let the cheesecake cool completely in the pan, then refrigerate for at least 2 hours until firm.
  7. Lift the cheesecake out using parchment, slice into bars, and top with whipped cream, toasted coconut flakes, lime zest, and lime wheels.
