Description

  • 1 cup coconut cream
  • 1/2 cup lime juice (freshly squeezed)
  • 1/2 cup maple syrup (or low-carb sweetener like erythritol)
  • 1 tablespoon lime zest
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Gather all ingredients and prepare the coconut milk and cream.
  2. In a bowl, whisk together the coconut milk and coconut cream until smooth.
  3. Add lime juice, lime zest, maple syrup (or sweetener), salt, and vanilla extract. Mix well.
  4. Cover and refrigerate the mixture for at least 1 hour.
  5. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
  6. If using the manual method, freeze in a shallow dish and stir every 30 minutes for 2–3 hours.
  7. Once frozen, let the ice cream sit at room temperature for 5–10 minutes before serving.

Notes
