- 1 tablespoon lime zest
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Gather all ingredients and prepare the coconut milk and cream.
- In a bowl, whisk together the coconut milk and coconut cream until smooth.
- Add lime juice, lime zest, maple syrup (or sweetener), salt, and vanilla extract. Mix well.
- Cover and refrigerate the mixture for at least 1 hour.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- If using the manual method, freeze in a shallow dish and stir every 30 minutes for 2–3 hours.
- Once frozen, let the ice cream sit at room temperature for 5–10 minutes before serving.
Notes
- Use freshly squeezed lime juice for the best flavor.
- Adjust sweetness to taste with preferred sweetener.
- If omitting vanilla extract, the coconut flavor will be more pronounced.
