Description

Coconut Mango Cheesecake Bars are a tropical dessert that blends creamy cheesecake with sweet mango and nutty coconut, perfect for summer occasions.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsweetened shredded coconut
  • 1/3 cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup fresh mango puree (about 2 ripe mangoes)
  • ½ cup sour cream
  • ¼ cup unsweetened coconut milk
  • 1/2 cup shredded coconut, toasted (optional)
  • Fresh mango slices for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs, shredded coconut, and sugar. Stir in melted butter until mixture resembles wet sand.
  2. Press crust mixture into a greased 9×13-inch pan. Bake for 10-12 minutes or until lightly golden. Let cool completely.
  3. In a mixing bowl, beat softened cream cheese until smooth. Gradually add sugar, then vanilla extract. Add eggs one at a time, beating after each addition.
  4. Mix in mango puree, sour cream, and coconut milk until well combined and smooth.
  5. Reduce oven temperature to 325°F (160°C). Pour filling over cooled crust and smooth the top. Bake for 40-45 minutes until center is set but slightly jiggly.
  6. Turn off oven and let bars cool inside with the door ajar for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.
  7. Lift cheesecake out of the pan and slice into bars. Garnish with toasted coconut and mango slices if desired. Serve chilled.

Notes

  • Use parchment paper for easy removal of bars.
  • Chilling overnight enhances flavor and texture.
  • Don’t overbake to avoid cracks in the cheesecake.
