Instructions
- Drain the crushed pineapple using a fine mesh sieve to remove excess liquid.

- Using a small cookie scoop or your hands, form the mixture into bite-sized balls (about 1 inch in diameter). Ensure they are tightly packed.
- Place the bites on a parchment-lined baking sheet and refrigerate for at least 30 minutes to firm up.
- Serve as is, or roll in additional shredded coconut or sprinkle with chopped nuts if desired.
