Description

Ingredients

  • 1/2 cup (50g) powdered sugar
  • 1 cup (225g) unsalted butter, softened
  • 1 cup (80g) sweetened shredded coconut
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • Optional: 1/2 teaspoon almond extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy (3–5 minutes).
  3. Mix in vanilla extract and almond extract if using.
  4. In a separate bowl, whisk together flour, shredded coconut, and salt.
  5. Gradually add the dry ingredients to the butter mixture, stirring until a thick, slightly crumbly dough forms.
  6. Divide dough in half and shape into two logs (about 1.5 inches in diameter). Wrap in plastic wrap and refrigerate for 1–2 hours or until firm.
  7. Slice the logs into 1/4-inch thick cookies and place on a parchment-lined baking sheet, 1 inch apart.
  8. Bake for 12–15 minutes or until edges are lightly golden.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
