- 1 cup all-purpose flour
- 1/2 cup cocoa powder
- 1/2 cup cold brew coffee
- 1 cup brown sugar, packed
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 cup chocolate chips
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, all-purpose flour, cocoa powder, baking soda, and salt. Whisk together and set aside.
- In another bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
- Pour in the cold brew coffee and mix until the dough is smooth. Fold in the chocolate chips.
- Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
- Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
- Serve warm or at room temperature.
Notes
- For gluten-free, substitute all-purpose flour with gluten-free flour.
- For vegan, replace eggs with flax eggs and use coconut oil instead of butter.
- Store cookies in an airtight container at room temperature for up to a week.
