Description

Ingredients

  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 cup cold brew coffee
  • 1 cup brown sugar, packed
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 cup chocolate chips
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, all-purpose flour, cocoa powder, baking soda, and salt. Whisk together and set aside.
  3. In another bowl, beat the softened butter and brown sugar together until light and fluffy, about 2-3 minutes.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  6. Pour in the cold brew coffee and mix until the dough is smooth. Fold in the chocolate chips.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  9. Let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
  10. Serve warm or at room temperature.

Notes

  • For gluten-free, substitute all-purpose flour with gluten-free flour.
  • For vegan, replace eggs with flax eggs and use coconut oil instead of butter.
