Description

Cookie ice cream sandwiches are a delightful treat that combines soft, chewy cookies with creamy ice cream, perfect for summer parties or family dessert nights.


Ingredients

  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 1/4 cups all-purpose flour

  • 1/2 teaspoon salt
  • 2 cups semi-sweet chocolate chips
  • 1 quart vanilla ice cream
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the softened butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  3. In another bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips.
  4. Drop rounded balls of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes until golden brown. Let cool on the baking sheets for a few minutes before transferring to a wire rack.
  5. Once cookies are cool, place a scoop of vanilla ice cream on the flat side of one cookie, top with another cookie, and gently press together to form a sandwich. Sprinkle with sea salt if desired.
