Description

Cool Summertime Oatmeal is a refreshing, no-cook breakfast featuring creamy oats soaked overnight and topped with juicy cherries, blueberries, and crunchy toasted walnuts.

Ingredients

Scale
  • 11/3 cups old-fashioned oats
  • 3/4 cup fat-free milk
  • 3/4 cup reduced-fat plain yogurt
  • 1/4 cup honey
  • 1 cup pitted fresh or frozen dark sweet cherries, thawed
  • 1 cup fresh or frozen blueberries, thawed
  • 1/2 cup chopped walnuts, toasted

Instructions

  1. In a bowl, mix oats, milk, yogurt, and honey. Stir well until combined and oats are coated evenly.
  2. Cover and refrigerate for at least 4 hours or overnight.
  3. Before serving, ensure fruit is thawed if frozen. Toast walnuts in a pan over medium heat for 5–7 minutes until fragrant and golden.
  4. Stir the chilled oatmeal, then divide into bowls. Top with cherries, blueberries, and toasted walnuts. Add extra honey if desired. Serve immediately.

Notes

  • Use certified gluten-free oats for a gluten-free version.
  • Substitute dairy ingredients with almond/oat milk and coconut yogurt for a dairy-free option.
  • Honey can be swapped with maple syrup or agave nectar for a vegan version.
  • Try different seasonal fruits like strawberries, raspberries, or peaches.
