Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
- In a large bowl, beat butter and granulated sugar with an electric mixer until light and fluffy (about 3–5 minutes).
- Add the egg, lemon zest, lemon juice, vanilla extract, and almond extract (if using). Mix until fully combined.
- Gradually mix in the dry ingredients at low speed until just combined. Do not overmix.
- Scoop dough onto the baking sheet using a cookie scoop, spacing 2 inches apart. Slightly flatten the tops if desired.
- Bake for 10–12 minutes or until edges are lightly golden. Centers may look slightly underbaked.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack.
- Prepare glaze by mixing powdered sugar and lemon juice until smooth. Drizzle over cooled cookies.
