Ingredients
Scale
- 2 large flour tortillas (10-inch)
- 1 cup refried beans (canned or homemade)
- 1 lb ground beef (450 g)
- 1 packet taco seasoning (about 1 oz or 28 g)
- 2 cups shredded cheese (cheddar or a Mexican blend)
- 1 cup diced tomatoes (fresh or canned)
- 1/2 cup sliced olives (black or green)
- 1/4 cup sliced green onions
- 1/2 cup sour cream (for drizzling)
- 1 tablespoon olive oil (for cooking)
- Salt and pepper (to taste)
Instructions
- In a skillet over medium heat, add the olive oil. Once heated, add the ground beef. Season with salt and pepper. Cook until browned, breaking it up into small pieces, about 5-7 minutes. Drain any excess fat.
- Sprinkle the taco seasoning over the cooked beef and stir in 1/4 cup of water. Simmer for about 5 minutes until the mixture thickens and is well combined. Remove from heat.
- Preheat your oven to 425°F (220°C).
- On a baking sheet, place one flour tortilla. Spread half of the refried beans evenly over the tortilla. Next, layer half of the seasoned ground beef over the beans. Sprinkle 1 cup of shredded cheese on top.
- Place the second tortilla on top of the cheese layer. Repeat the layering process with the remaining refried beans, ground beef, and another cup of shredded cheese.
- Place the assembled pizza in the preheated oven. Bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden brown.
- Once out of the oven, immediately top the pizza with diced tomatoes, sliced olives, and green onions.
- Using a spoon or a squeeze bottle, drizzle sour cream over the top of the pizza for a creamy finish.
- Allow the pizza to cool for a few minutes before slicing into wedges. Serve warm and enjoy!
Notes
- For a gluten-free option, use corn tortillas instead of flour.
- If vegan, replace ground beef with lentils or a plant-based meat alternative and use dairy-free cheese.
- Store leftovers in the refrigerator for up to 3 days.
- Reheat in the oven at 350°F (175°C) for about 10 minutes.
