A delightful blend of flavors and textures, this Copycat Mexican Pizza features a crispy crust topped with zesty beans, fresh vegetables, and melted cheese, perfect for casual dinners or parties.

  • 2 large flour tortillas (10-inch)
  • 1 cup refried beans (canned or homemade)
  • 1 lb ground beef (450 g)
  • 1 packet taco seasoning (about 1 oz or 28 g)
  • 2 cups shredded cheese (cheddar or a Mexican blend)
  • 1 cup diced tomatoes (fresh or canned)
  • 1/2 cup sliced olives (black or green)
  • 1/4 cup sliced green onions
  • 1/2 cup sour cream (for drizzling)
  • 1 tablespoon olive oil (for cooking)
  • Salt and pepper (to taste)

Instructions

  1. In a skillet over medium heat, add the olive oil. Once heated, add the ground beef. Season with salt and pepper. Cook until browned, breaking it up into small pieces, about 5-7 minutes. Drain any excess fat.
  2. Sprinkle the taco seasoning over the cooked beef and stir in 1/4 cup of water. Simmer for about 5 minutes until the mixture thickens and is well combined. Remove from heat.
  3. Preheat your oven to 425°F (220°C).
  4. On a baking sheet, place one flour tortilla. Spread half of the refried beans evenly over the tortilla. Next, layer half of the seasoned ground beef over the beans. Sprinkle 1 cup of shredded cheese on top.
  5. Place the second tortilla on top of the cheese layer. Repeat the layering process with the remaining refried beans, ground beef, and another cup of shredded cheese.
  6. Place the assembled pizza in the preheated oven. Bake for about 10-12 minutes, or until the cheese is melted and bubbly, and the edges of the tortillas are golden brown.
  7. Once out of the oven, immediately top the pizza with diced tomatoes, sliced olives, and green onions.
  8. Using a spoon or a squeeze bottle, drizzle sour cream over the top of the pizza for a creamy finish.
  9. Allow the pizza to cool for a few minutes before slicing into wedges. Serve warm and enjoy!

Notes

  • For a gluten-free option, use corn tortillas instead of flour.
  • If vegan, replace ground beef with lentils or a plant-based meat alternative and use dairy-free cheese.
