Instructions
- Preheat your waffle iron according to the manufacturer’s instructions.
- In a large mixing bowl, combine cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
- In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract. Pour into the dry ingredients and stir gently until just mixed.
- Fold in the corn kernels into the batter.
- Lightly grease the waffle iron and pour 1/4 to 1/2 cup of batter onto the iron. Cook for 4-5 minutes until golden brown and crisp.
