  • 1/2 cup honey

Instructions

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. In a large mixing bowl, combine cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. Whisk until well mixed.
  3. In a separate bowl, whisk together the buttermilk, vegetable oil, eggs, and vanilla extract. Pour into the dry ingredients and stir gently until just mixed.
  4. Fold in the corn kernels into the batter.
  5. Lightly grease the waffle iron and pour 1/4 to 1/2 cup of batter onto the iron. Cook for 4-5 minutes until golden brown and crisp.
  6. In a small bowl, combine softened butter, honey, and cinnamon (if using). Whip together until smooth and creamy.
