Description

Ingredients

  • 1 1/4 cup granulated sugar
  • 3/4 cup light brown sugar
  • 2 tsp vanilla extract
  • 2 eggs, room temperature
  • 1 2/3 cups all-purpose flour
  • 2 tsp corn starch
  • 1 cup cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp kosher salt
  • 8 oz semi-sweet chocolate (for ganache)
  • 3/4 cup heavy cream
  • 1/2 tsp vanilla extract (for ganache)
  • 1 cup cosmic brownie sprinkles

Instructions

  1. In a stand mixer bowl, combine melted butter, granulated sugar, brown sugar, and vanilla extract. Mix on medium speed for 1 minute until smooth.
  2. Add the eggs, one at a time, mixing on low speed until fully incorporated.
  3. In a separate bowl, whisk together flour, corn starch, cocoa powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture and mix on low speed until just combined. Do not overmix.
  5. Using a medium cookie scoop (about 2–2.5 tbsp), scoop 20 cookie dough balls onto a parchment-lined baking sheet. Chill for 30 minutes.
  6. Preheat oven to 350°F (175°C). Place chilled cookie dough 2 inches apart on the baking sheet and bake for 9–10 minutes. Edges should be set while centers may look underdone.
  7. Let cookies cool on the sheet for 3 minutes, then transfer to a wire rack to cool completely.
  8. For the ganache, break the chocolate into pieces and place in a heatproof bowl. Heat heavy cream in a small pot until simmering, then pour over chocolate. Let sit for 5 minutes.
  9. Add 1/2 tsp vanilla extract and whisk until smooth. Let ganache cool for 15–30 minutes until spreadable.
  10. Spread 2–3 tbsp of ganache on each cooled cookie and top with cosmic brownie sprinkles. Let set before serving.
