  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • ¾ cup granulated sugar
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 ½ cups fresh raspberries
  • 1 cup rolled oats
  • ½ cup almond flour
  • ½ teaspoon cinnamon (optional)
  • Additional flour, oats, almond flour, cinnamon, and cold butter for crumble topping

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together all-purpose flour, baking soda, salt, almond flour, and cinnamon (if using); set aside.
  3. In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, mixing well after each, then add vanilla extract and stir to combine.
  5. Gradually add dry mixture to wet ingredients, mixing until just combined.
  6. Gently fold in fresh raspberries and rolled oats.
  7. In a small bowl, prepare crumble topping by mixing flour, oats, almond flour, and cinnamon. Add a few tablespoons of cold butter and use fingers to form crumbles.
  8. Scoop tablespoon-sized portions of dough onto baking sheet and sprinkle crumble topping over each cookie.
  9. Bake for 12–15 minutes or until edges are golden. Let cookies cool on sheet for a few minutes before transferring to a wire rack.
  10. Serve warm or at room temperature with milk, tea, or coffee.
