Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together all-purpose flour, baking soda, salt, almond flour, and cinnamon (if using); set aside.
- In a separate bowl, cream the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3-4 minutes).
- Add eggs one at a time, mixing well after each, then add vanilla extract and stir to combine.
- Gradually add dry mixture to wet ingredients, mixing until just combined.
- Gently fold in fresh raspberries and rolled oats.
- In a small bowl, prepare crumble topping by mixing flour, oats, almond flour, and cinnamon. Add a few tablespoons of cold butter and use fingers to form crumbles.
- Scoop tablespoon-sized portions of dough onto baking sheet and sprinkle crumble topping over each cookie.
- Bake for 12–15 minutes or until edges are golden. Let cookies cool on sheet for a few minutes before transferring to a wire rack.
- Serve warm or at room temperature with milk, tea, or coffee.
