Description
Cottage Cheese Banana Pudding is a creamy and indulgent dessert that combines cottage cheese and ripe bananas for a refreshing and nutritious treat.
Ingredients
Scale
- 2 cups cottage cheese (drained)
- 2 ripe bananas (sliced)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup milk (or dairy-free alternative)
- 1 tablespoon cornstarch (optional)
- 1/2 teaspoon ground cinnamon (optional)
- Whipped cream (for serving, optional)
Instructions
- Place the drained cottage cheese into a mixing bowl and whip with a hand mixer or fork until smooth. Leave some chunks for texture, but aim for a creamy base.
- Add granulated sugar, vanilla extract, and optional cinnamon or cornstarch. Mix until combined and the sugar dissolves.
- Gently fold in the sliced bananas, being careful not to mash them. Keep some pieces intact for texture.
- If the pudding is too thick, add milk slowly until the desired consistency is achieved.
- Transfer the pudding to serving dishes, cover with plastic wrap or a lid, and refrigerate for at least 1 hour.
- Garnish with whipped cream and additional banana slices before serving. Serve chilled.
Notes
- For a vegan option, replace cottage cheese with dairy-free cottage cheese or silken tofu.
- Use almond, coconut, or oat milk to make it dairy-free.
- For a lower sugar version, substitute sugar with honey, agave nectar, or stevia.
- Arrowroot powder can be used instead of cornstarch for a gluten-free version.
- Feel free to add nutmeg or almond extract for a unique flavor variation.
