Description

Cottage Cheese Raspberry Mousse is a light, fluffy dessert combining creamy cottage cheese with the fresh tartness of raspberries. It’s a healthier mousse option without heavy cream or refined sugars.

  • 1 cup fresh raspberries
  • ¼ cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 tablespoon freshly squeezed lemon juice
  • ½ cup whipped cream or dairy-free alternative (optional)
  • 1 tablespoon gelatin (optional, agar-agar for vegetarian)

Instructions

  1. Rinse raspberries under cool water, drain, and pat dry. Thaw and drain frozen raspberries if used.
  2. Blend cottage cheese, honey/maple syrup, vanilla extract, and lemon juice until smooth and creamy.
  3. Add raspberries to mixture and pulse to combine while leaving some chunks, or blend fully for smooth mousse.
  4. Fold in whipped cream or dairy-free alternative if desired. Dissolve gelatin or agar-agar in hot water and add to mixture if using.
  5. Transfer mousse to serving dishes, cover, and refrigerate at least 2 hours to set.
  6. Serve chilled, garnished with raspberries, mint, or cocoa powder if desired.
