- 1 tablespoon gelatin (optional, agar-agar for vegetarian)
Instructions
- Rinse raspberries under cool water, drain, and pat dry. Thaw and drain frozen raspberries if used.
- Blend cottage cheese, honey/maple syrup, vanilla extract, and lemon juice until smooth and creamy.
- Add raspberries to mixture and pulse to combine while leaving some chunks, or blend fully for smooth mousse.
- Fold in whipped cream or dairy-free alternative if desired. Dissolve gelatin or agar-agar in hot water and add to mixture if using.
- Transfer mousse to serving dishes, cover, and refrigerate at least 2 hours to set.
- Serve chilled, garnished with raspberries, mint, or cocoa powder if desired.
