- 4 cups of day-old bread, cubed
- 8 ounces of cream cheese, softened
- 1 cup of fresh strawberries, hulled and sliced
- 4 large eggs
- 1 cup of milk (whole or 2%)
- 1/2 cup of granulated sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of ground cinnamon
- 1/4 teaspoon of salt
- 1/4 cup of powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
- In a bowl, beat softened cream cheese and granulated sugar until smooth and creamy. Fold in sliced strawberries. Set aside.
- In another bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and salt.
- Add cubed bread to the egg mixture and let soak for 10 minutes.
- Fill each muffin cup halfway with the soaked bread mixture. Add a spoonful of the cream cheese mixture, then top with more bread mixture, filling about 3/4 full.
- Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Cool in the pan for 10 minutes, transfer to a wire rack, and dust with powdered sugar before serving warm.
