Description

Cream Cheese Strawberry French Toast Muffins are a delicious breakfast treat made with soaked bread cubes, a sweet cream cheese and strawberry filling, and a dusting of powdered sugar. Perfectly golden and soft inside, these muffins are ideal for weekend brunch or a make-ahead morning delight.


Ingredients

  • 4 cups of day-old bread, cubed
  • 8 ounces of cream cheese, softened
  • 1 cup of fresh strawberries, hulled and sliced
  • 4 large eggs
  • 1 cup of milk (whole or 2%)
  • 1/2 cup of granulated sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of ground cinnamon
  • 1/4 teaspoon of salt
  • 1/4 cup of powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line it with muffin liners.
  2. In a bowl, beat softened cream cheese and granulated sugar until smooth and creamy. Fold in sliced strawberries. Set aside.
  3. In another bowl, whisk together eggs, milk, vanilla extract, ground cinnamon, and salt.
  4. Add cubed bread to the egg mixture and let soak for 10 minutes.
  5. Fill each muffin cup halfway with the soaked bread mixture. Add a spoonful of the cream cheese mixture, then top with more bread mixture, filling about 3/4 full.
  6. Bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  7. Cool in the pan for 10 minutes, transfer to a wire rack, and dust with powdered sugar before serving warm.

  • Use day-old bread for best texture—avoid soft, fresh bread.
  • Frozen strawberries can be used, but reduce added liquid slightly.
