- 2 large ripe peaches, sliced

- 1 cup granola (your choice)
- Fresh mint leaves for garnish
Instructions
- In a medium bowl, combine the chia seeds, almond milk, honey, and vanilla extract. Whisk together until well mixed. Let the mixture sit for about 5 minutes, then whisk again to prevent clumping. Cover the bowl and refrigerate for at least 2 hours, or overnight, until the chia seeds have absorbed the liquid and the pudding has thickened.
- While the chia pudding is chilling, wash and slice the ripe peaches into thin wedges. Set aside.
- Once the chia pudding is ready, take serving glasses or bowls and start layering. Begin with a layer of chia pudding at the bottom, followed by a layer of sliced peaches. Repeat the layers until the glasses are filled, finishing with a layer of chia pudding on top.
- Sprinkle a generous amount of granola on top of each parfait for added crunch.
