- 12 oz (about 340 g) fresh tortellini
- 1 lb (about 450 g) shrimp, peeled and deveined
- 4 cups (about 120 g) fresh spinach, washed and roughly chopped
- 3 cloves garlic, minced
- 1 cup (about 240 ml) heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- Begin by boiling a pot of salted water. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
- Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted.
- Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and black pepper to taste.
- Add the cooked tortellini and shrimp back into the skillet. Gently toss everything together until the tortellini and shrimp are well coated in the creamy sauce.
Notes
- For a lighter option, use half-and-half instead of heavy cream.
- Swap shrimp for chicken or tofu for a different protein.
- Use frozen tortellini if fresh is unavailable.
- Spinach can be replaced with kale or arugula for a twist.
- Store leftovers in an airtight container in the refrigerator and consume within 2-3 days.
