Description

A delightful dish that combines rich flavors and a creamy texture with tender tortellini, succulent shrimp, and fresh spinach.


Ingredients

  • 12 oz (about 340 g) fresh tortellini
  • 1 lb (about 450 g) shrimp, peeled and deveined
  • 4 cups (about 120 g) fresh spinach, washed and roughly chopped
  • 3 cloves garlic, minced
  • 1 cup (about 240 ml) heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Begin by boiling a pot of salted water. Add the tortellini and cook according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn it.
  4. Add the chopped spinach to the skillet and cook for 2-3 minutes, stirring frequently, until wilted.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese until melted and the sauce is smooth. Season with additional salt and black pepper to taste.
  6. Add the cooked tortellini and shrimp back into the skillet. Gently toss everything together until the tortellini and shrimp are well coated in the creamy sauce.

Notes

  • For a lighter option, use half-and-half instead of heavy cream.
  • Swap shrimp for chicken or tofu for a different protein.
  • Use frozen tortellini if fresh is unavailable.
  • Spinach can be replaced with kale or arugula for a twist.
  • Store leftovers in an airtight container in the refrigerator and consume within 2-3 days.
