Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3–5 minutes).
- Add the egg, vanilla extract, and almond extract to the mixture and mix until smooth.
- In a separate bowl, whisk together flour, baking soda, baking powder, corn starch (if using), and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Form the dough into 1 to 1.5 inch balls and place on a parchment-lined baking sheet, spaced 2 inches apart.
- Sprinkle the tops of the cookies with granulated sugar before baking.
- Bake for 10–12 minutes or until edges are lightly golden and centers look slightly underbaked.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
- Once cooled, caramelize the sugar topping with a kitchen torch for a true crème brûlée finish.
