A delightful twist on the classic Caesar salad featuring crunchy chickpeas, creamy dressing, and fresh greens.

- 1 can of chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 large head of romaine lettuce, chopped
- ½ cup grated or shaved Parmesan cheese
- ½ cup Caesar dressing
- 1 cup croutons (store-bought or homemade)
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine the drained chickpeas with olive oil, garlic powder, smoked paprika, and a pinch of salt. Toss until evenly coated.
- Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, shaking the pan halfway through.
- While the chickpeas are roasting, chop the romaine lettuce and place it in a large salad bowl.
- Drizzle the Caesar dressing and lemon juice over the chopped romaine. Toss gently to coat.
- Once the chickpeas are done roasting, allow them to cool slightly and add them to the bowl with the romaine lettuce. Toss to combine.
- Sprinkle the Parmesan cheese over the salad, followed by the croutons. Season with black pepper to taste.
- Serve immediately while the chickpeas are still warm and crispy.
Notes
- For a vegan option, use nutritional yeast instead of Parmesan cheese.
- Ensure croutons are gluten-free for a gluten-free version.
- Store leftovers in an airtight container in the refrigerator, keeping the dressing separate.
