Description

A delightful twist on the classic Caesar salad featuring crunchy chickpeas, creamy dressing, and fresh greens.


Ingredients

  • 1 can of chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 large head of romaine lettuce, chopped
  • ½ cup grated or shaved Parmesan cheese
  • ½ cup Caesar dressing
  • 1 cup croutons (store-bought or homemade)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the drained chickpeas with olive oil, garlic powder, smoked paprika, and a pinch of salt. Toss until evenly coated.
  3. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, shaking the pan halfway through.
  4. While the chickpeas are roasting, chop the romaine lettuce and place it in a large salad bowl.
  5. Drizzle the Caesar dressing and lemon juice over the chopped romaine. Toss gently to coat.
  6. Once the chickpeas are done roasting, allow them to cool slightly and add them to the bowl with the romaine lettuce. Toss to combine.
  7. Sprinkle the Parmesan cheese over the salad, followed by the croutons. Season with black pepper to taste.
  8. Serve immediately while the chickpeas are still warm and crispy.

  • For a vegan option, use nutritional yeast instead of Parmesan cheese.
  • Ensure croutons are gluten-free for a gluten-free version.
  • Store leftovers in an airtight container in the refrigerator, keeping the dressing separate.
