- 2 cans (15 oz each) chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional for heat)
- 1/4 cup nutritional yeast (for a cheesy flavor)
- 1/4 cup chopped nuts (optional)
- 1/4 cup dried fruit (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the drained chickpeas with olive oil, garlic powder, smoked paprika, salt, black pepper, and cayenne pepper if using. Toss until well-coated.
- Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, stirring halfway through.
- Once roasted, remove from the oven and let cool slightly. Mix in the chopped nuts and dried fruit if desired.
Notes
- Store in an airtight container at room temperature for up to a week.
- Reheat in the oven at 350°F (175°C) for 5-10 minutes if desired.
- For a nut-free version, replace nuts with seeds.
