Description

A crunchy and flavorful snack made from roasted chickpeas, nuts, and dried fruit, perfect for any occasion.


Ingredients

  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional for heat)
  • 1/4 cup nutritional yeast (for a cheesy flavor)
  • 1/4 cup chopped nuts (optional)
  • 1/4 cup dried fruit (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the drained chickpeas with olive oil, garlic powder, smoked paprika, salt, black pepper, and cayenne pepper if using. Toss until well-coated.
  3. Spread the seasoned chickpeas in a single layer on a baking sheet lined with parchment paper. Bake for about 25-30 minutes, stirring halfway through.
  4. Once roasted, remove from the oven and let cool slightly. Mix in the chopped nuts and dried fruit if desired.

Notes

  • Store in an airtight container at room temperature for up to a week.
  • Reheat in the oven at 350°F (175°C) for 5-10 minutes if desired.
  • For a nut-free version, replace nuts with seeds.
