  • 3 tablespoons olive oil (plus extra for frying)
  • 2 tablespoons freshly squeezed lemon juice
  • 1/4 cup fresh parsley, chopped
  • Salt to taste
  • Black pepper to taste
  • 1 teaspoon paprika (optional)
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Prepare the couscous by boiling water, adding couscous, and letting it sit covered for 5 minutes.
  2. Chop the vegetables and mix them with olive oil, lemon juice, parsley, and spices.
  3. Cook the halloumi slices in a skillet until golden brown and crispy.
  4. Assemble the bowl with couscous, vegetables, and halloumi on top.
