Ingredients

- 2 cans of chickpeas (15 oz each), drained and rinsed
- 3 cloves garlic, minced
- Zest from 1 lemon
- 1/4 cup fresh parsley, finely chopped
- 1 cup breadcrumbs (gluten-free if needed)
- 1 teaspoon ground cumin
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
- 2 tablespoons olive oil (for cooking)
- Optional: Lemon wedges (for serving)
Instructions
- Mash the drained chickpeas in a large bowl until chunky.
- Add minced garlic, lemon zest, chopped parsley, breadcrumbs, ground cumin, salt, and black pepper to the mashed chickpeas and mix until well combined.
- Form the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick.
- Heat olive oil in a skillet over medium heat and cook the patties for 4-5 minutes on each side until golden brown and crispy.
Notes
- Store leftovers in an airtight container in the refrigerator for up to three days.
- To reheat, place patties in a skillet over medium heat until warmed through.
- For freezing, place uncooked patties on a baking sheet and freeze until solid, then transfer to a freezer bag.
