- 1 cup grated Parmesan cheese
- 1 cup breadcrumbs (preferably panko for extra crunch)
- 1 teaspoon garlic powder
- 1 tablespoon lemon zest (from about 1 lemon)
- 1/2 teaspoon black pepper (or to taste)
- 2 tablespoons olive oil (for drizzling)
- Salt to taste
Instructions
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Cut the fresh salmon fillets into bite-sized pieces, about 2.5 cm (1 inch) cubes, and pat them dry with a paper towel.
- In a large bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, lemon zest, black pepper, and a pinch of salt. Mix well.
- Dip each piece of salmon into the breadcrumb mixture, pressing gently to ensure the coating adheres well.
- Place the coated salmon bites on the prepared baking sheet in a single layer.
- Lightly drizzle the tops of the salmon bites with olive oil.
- Bake for about 12-15 minutes, or until the salmon is cooked through and the coating is golden brown and crispy.
- Remove from the oven, let cool for a minute, and serve warm as an appetizer or snack.
