Description

Crispy zucchini chips, seasoned with garlic powder, onion powder, paprika, and Parmesan, offer a healthy, crunchy snack or side dish.

Ingredients

Scale
  • 2 medium zucchinis
  • 1 cup of breadcrumbs (Panko for extra crunch)
  • ½ cup of grated Parmesan cheese (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 large eggs
  • Cooking spray or olive oil for greasing

Instructions

  1. Wash the zucchinis thoroughly and slice them into thin rounds, 1/8 to 1/4 inch thick.
  2. Preheat the oven to 225°F (110°C) or set your dehydrator to a low temperature.
  3. Mix breadcrumbs, Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper in a small bowl. Whisk eggs in another bowl until fluffy.
  4. Dip each zucchini slice into the egg mixture, then coat with the breadcrumb mixture. Arrange them on a parchment-lined baking sheet.
  5. Spray the zucchini chips with cooking spray or drizzle olive oil over them. Bake for 1.5 to 2 hours, flipping halfway through to ensure even crispiness.
  6. Let the chips cool for a few minutes, then serve warm or at room temperature.

Notes

  • For a gluten-free option, use gluten-free breadcrumbs or crushed gluten-free crackers.
  • If avoiding dairy, substitute Parmesan with nutritional yeast or omit it altogether.
  • For a vegan alternative, replace eggs with flaxseed meal and water or unsweetened applesauce.
  • To enhance flavor, add cayenne pepper or curry powder to the breadcrumbs for a twist.
  • For a more intense flavor, let zucchini slices sit with salt for 30 minutes before cooking to draw out moisture.
