- 1.5 lbs boneless, skinless chicken thighs
- 1/2 cup honey
- 1/4 cup soy sauce
- 4 cloves garlic, minced
- 2 tablespoons freshly squeezed lime juice
- 8 taco shells (soft or hard, based on preference)
- 2 cups shredded cabbage (for topping)
- 1/2 cup fresh cilantro (chopped, for garnish)
- 1 avocado (sliced, for topping)
- Salt and pepper (to taste)
Instructions
- Place the chicken thighs in the bottom of the crockpot and season with salt and pepper.
- In a bowl, combine honey, soy sauce, minced garlic, and lime juice. Stir well.
- Pour the honey garlic sauce over the chicken in the crockpot.
- Cover and cook on low for 6–7 hours or on high for 3–4 hours.
- Once cooked, shred the chicken using two forks and return it to the crockpot to soak up the sauce.
- Warm your taco shells or tortillas.
- Spoon the honey garlic chicken into each shell.
- Top with your favorite toppings such as shredded cabbage, sliced avocado, chopped cilantro, lime wedges, and a drizzle of sriracha mayo or sour cream.
