Description

Crumble Mini Peach Pie is a delicious individual dessert combining sweet, juicy peaches with a crisp, buttery oat crumble. Perfectly portioned and full of summer flavor, these mini pies make a charming treat for any occasion.


Ingredients

  • 2 cups fresh peaches, peeled and diced (about 4 medium peaches)
  • ¼ cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • ¾ cup all-purpose flour
  • ½ cup rolled oats
  • ½ cup brown sugar, packed
  • ½ teaspoon ground cinnamon
  • ⅓ cup cold unsalted butter, diced
  • 1 package of premade pie crusts (or homemade)
  • Cooking spray or butter (for greasing)

Instructions

  1. Peel and dice the peaches. In a bowl, mix them with sugar, cornstarch, vanilla extract, lemon juice, and cinnamon. Let sit for 10–15 minutes.
  2. Roll out the premade pie crusts and cut into circles to fit mini pie tins. Press into tins and trim the edges.
  3. In another bowl, mix flour, oats, brown sugar, cinnamon, and cold butter. Use fingers or a pastry cutter to form coarse crumbs.
  4. Preheat oven to 350°F (175°C). Fill crusts with peach mixture, then top with crumble.
  5. Place pies on a baking sheet and bake for 25–30 minutes or until golden brown.
  6. Cool slightly before serving. Enjoy warm or at room temperature.

Notes

  • To make it gluten-free, use GF flour and oats.
  • Substitute butter with coconut oil for dairy-free version.
  • Add nutmeg, ginger, or almond extract for variation.
  • Use homemade crust for a fully from-scratch pie.
