Description
Crumble Mini Peach Pie is a delicious individual dessert combining sweet, juicy peaches with a crisp, buttery oat crumble. Perfectly portioned and full of summer flavor, these mini pies make a charming treat for any occasion.

- 2 cups fresh peaches, peeled and diced (about 4 medium peaches)
- ¼ cup granulated sugar
- 1 tablespoon cornstarch
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- ½ teaspoon ground cinnamon
- ¾ cup all-purpose flour
- ½ cup rolled oats
- ½ cup brown sugar, packed
- ½ teaspoon ground cinnamon
- ⅓ cup cold unsalted butter, diced
- 1 package of premade pie crusts (or homemade)
- Cooking spray or butter (for greasing)
Instructions
- Peel and dice the peaches. In a bowl, mix them with sugar, cornstarch, vanilla extract, lemon juice, and cinnamon. Let sit for 10–15 minutes.
- Roll out the premade pie crusts and cut into circles to fit mini pie tins. Press into tins and trim the edges.
- In another bowl, mix flour, oats, brown sugar, cinnamon, and cold butter. Use fingers or a pastry cutter to form coarse crumbs.
- Preheat oven to 350°F (175°C). Fill crusts with peach mixture, then top with crumble.
- Place pies on a baking sheet and bake for 25–30 minutes or until golden brown.
- Cool slightly before serving. Enjoy warm or at room temperature.
Notes
- To make it gluten-free, use GF flour and oats.
- Substitute butter with coconut oil for dairy-free version.
- Add nutmeg, ginger, or almond extract for variation.
- Use homemade crust for a fully from-scratch pie.
