Description

Cucumber Hummus Snack Cups are a fresh and healthy snack that combines the crispness of cucumbers with creamy hummus, perfect for parties or a quick treat.


Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice (freshly squeezed)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt (or to taste)
  • 1/2 teaspoon paprika (plus extra for garnish)
  • Fresh parsley or dill for garnish (optional)

Instructions

  1. Wash the cucumbers thoroughly and slice them into 1/2-inch thick rounds.
  2. In a food processor, combine chickpeas, tahini, garlic, lemon juice, olive oil, salt, and paprika. Blend until smooth.
  3. Taste the hummus and adjust seasoning as needed.
  4. Fill each cucumber round with hummus using a spoon or piping bag.
  5. Garnish with extra paprika and fresh herbs, then serve or chill before serving.
