Instructions
- Preheat your oven to 350°F (175°C). Combine the crushed chocolate wafer cookies, melted butter, and granulated sugar in a medium bowl, mixing until it resembles wet sand. Press into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and then let cool.
- In a large bowl, beat softened cream cheese and granulated sugar with an electric mixer on medium speed until smooth. Add vanilla extract and sour cream, mixing well. Add eggs one at a time, fully incorporating each before adding the next.
- Melt the dark chocolate over a double boiler or in the microwave, then allow it to cool slightly. Fold it into the cream cheese mixture gently, being careful not to overmix.
- Fold in the fresh raspberries, being careful not to crush them. Pour the cheesecake filling onto the cooled chocolate crust, spreading evenly.
- Bake the cheesecake for 50-60 minutes, or until the center is set but slightly jiggly. Turn off the oven, crack the door, and let the cheesecake cool for about an hour before removing it from the oven.
- Refrigerate the cheesecake for at least 4 hours or overnight to set. Whip the heavy cream with powdered sugar until soft peaks form, then spread on top of the cheesecake. Garnish with extra raspberries and chocolate shavings as desired.
