Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup sugar
  • 2 large eggs
  • ½ cup milk
  • ⅓ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup dark chocolate chips
  • 1 cup fresh cherries, pitted and halved

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
  3. In another bowl, beat the eggs, then add the milk, vegetable oil, and vanilla extract. Stir until well combined and pour into the dry ingredients.
  4. Gently fold in the dark chocolate chips and halved fresh cherries.
  5. Line a muffin tin with paper liners and fill each cup about three-quarters full with the batter.
  6. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Let cool in the tin for about 5 minutes before transferring to a wire rack.

Notes

  • Store muffins in an airtight container at room temperature for up to three days.
  • For longer storage, freeze muffins wrapped in plastic wrap and placed in a freezer bag for up to three months.
  • Reheat in the microwave for a few seconds before serving.
