Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a small saucepan, warm the buttermilk (do not boil). Add Earl Grey tea leaves and lavender, then steep for 15 minutes. Strain and let cool slightly.
  3. In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3–5 minutes.
  4. Add the eggs one at a time, beating well after each addition. Mix in the strained buttermilk and vanilla extract until combined.
  5. In another bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
  6. Gradually stir the dry ingredients into the wet mixture until just combined. Avoid overmixing.
  7. Divide the batter evenly between the prepared pans and smooth the tops.
  8. Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  10. (Optional) Prepare a lavender buttercream or cream cheese frosting. Add a bit of Earl Grey tea for enhanced flavor.
  11. Frost and layer the cakes once completely cool. Decorate with edible flowers or lavender sprigs.
