Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a small saucepan, warm the buttermilk (do not boil). Add Earl Grey tea leaves and lavender, then steep for 15 minutes. Strain and let cool slightly.
- In a large bowl, cream together the softened butter and sugar until light and fluffy, about 3–5 minutes.
- Add the eggs one at a time, beating well after each addition. Mix in the strained buttermilk and vanilla extract until combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, and lemon zest.
- Gradually stir the dry ingredients into the wet mixture until just combined. Avoid overmixing.
- Divide the batter evenly between the prepared pans and smooth the tops.
- Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.
- Let cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
- (Optional) Prepare a lavender buttercream or cream cheese frosting. Add a bit of Earl Grey tea for enhanced flavor.
- Frost and layer the cakes once completely cool. Decorate with edible flowers or lavender sprigs.
