Ingredients

  • 1 cup buttermilk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: 1 cup of add-ins (chocolate chips, berries, nuts, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C) and line or grease a muffin tin.
  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together melted butter, buttermilk, eggs, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and gently fold until just combined.
  5. Fold in any optional add-ins like chocolate chips, berries, or nuts.
  6. Spoon batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

  • Use room temperature eggs and buttermilk for best results.
