Ingredients

  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup crumbled feta cheese
  • 1/2 cup pitted olives, chopped
  • 3/4 cup milk, cold
  • 1/4 cup fresh herbs (such as dill, parsley, or chives), chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
  2. In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
  3. Add the cold, cubed butter to the dry ingredients and work it into the flour mixture until it resembles coarse crumbs.
  4. Gently fold in the crumbled feta cheese, chopped olives, and fresh herbs.
  5. Pour the cold milk into the bowl and stir gently until just combined.
  6. Turn the dough out onto a lightly floured surface, pat it into a circle about 1 inch thick, and cut into 8 wedges.
  7. Transfer the wedges to the prepared baking sheet and bake for 20-25 minutes until golden brown.
  8. Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack.
