- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1 cup crumbled feta cheese
- 1/2 cup pitted olives, chopped
- 3/4 cup milk, cold
- 1/4 cup fresh herbs (such as dill, parsley, or chives), chopped
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a large bowl, whisk together the all-purpose flour, baking powder, and salt until well combined.
- Add the cold, cubed butter to the dry ingredients and work it into the flour mixture until it resembles coarse crumbs.
- Gently fold in the crumbled feta cheese, chopped olives, and fresh herbs.
- Pour the cold milk into the bowl and stir gently until just combined.
- Turn the dough out onto a lightly floured surface, pat it into a circle about 1 inch thick, and cut into 8 wedges.
- Transfer the wedges to the prepared baking sheet and bake for 20-25 minutes until golden brown.
- Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack.
