- 3 large eggs

- 1 teaspoon pure vanilla extract
- 2 cups grated carrots (about 3 medium carrots)
- ½ cup unsweetened applesauce
- ½ cup chopped walnuts or pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease or line an 8-inch round cake pan with parchment paper.
- In a blender or food processor, blend the rolled oats until they form a fine flour-like consistency.
- In a large bowl, whisk together the blended oats, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk the eggs, maple syrup, and vanilla extract. Then stir in the grated carrots and applesauce.
- Gradually fold the wet mixture into the dry mixture until just combined. If using nuts, fold them in gently.
- Pour the batter into the prepared pan and smooth the top. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before serving.
