Description

French Cherry Clafoutis is a classic custard-like dessert with a dense, creamy batter baked over fresh cherries. It offers a delightful contrast between the sweet base and the slightly tart cherries, creating a rustic yet elegant dish that can be served warm or chilled.

Ingredients

Scale
  • 1 ½ cups fresh cherries (pitted or unpitted)
  • 1 cup whole milk
  • 3 large eggs
  • ¾ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • ½ cup all-purpose flour
  • ¼ teaspoon salt
  • 2 tablespoons unsalted butter (for greasing)
  • Powdered sugar (optional, for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch baking dish with butter.
  3. Wash and pit the cherries if desired. Spread them evenly in the baking dish.
  4. In a mixing bowl, whisk together eggs, sugar, vanilla extract, and almond extract until smooth.
  5. Gradually add milk, whisking continuously.
  6. Sift in flour and salt, mixing just until smooth. Do not overmix.
  7. Pour the batter over the cherries in the dish.
  8. Bake for 35–40 minutes or until puffed and golden brown. A toothpick inserted in the center should come out clean.
  9. Let it cool slightly before serving. Dust with powdered sugar if desired.

Notes

  • Use the freshest cherries available for best flavor.
  • Substitute milk with almond, coconut, or oat milk for a dairy-free version.
  • Try adding cinnamon or citrus zest for extra flavor.
  • Serve with whipped cream, vanilla ice cream, or berry syrup for a decadent touch.
  • Store leftovers in the fridge for up to 1 week.
