Description
French Cherry Clafoutis is a classic custard-like dessert with a dense, creamy batter baked over fresh cherries. It offers a delightful contrast between the sweet base and the slightly tart cherries, creating a rustic yet elegant dish that can be served warm or chilled.

Scale
- 1 ½ cups fresh cherries (pitted or unpitted)
- 1 cup whole milk
- 3 large eggs
- ¾ cup granulated sugar
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (optional)
- ½ cup all-purpose flour
- ¼ teaspoon salt
- 2 tablespoons unsalted butter (for greasing)
- Powdered sugar (optional, for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9-inch baking dish with butter.
- Wash and pit the cherries if desired. Spread them evenly in the baking dish.
- In a mixing bowl, whisk together eggs, sugar, vanilla extract, and almond extract until smooth.
- Gradually add milk, whisking continuously.
- Sift in flour and salt, mixing just until smooth. Do not overmix.
- Pour the batter over the cherries in the dish.
- Bake for 35–40 minutes or until puffed and golden brown. A toothpick inserted in the center should come out clean.
- Let it cool slightly before serving. Dust with powdered sugar if desired.
Notes
- Use the freshest cherries available for best flavor.
- Substitute milk with almond, coconut, or oat milk for a dairy-free version.
- Try adding cinnamon or citrus zest for extra flavor.
- Serve with whipped cream, vanilla ice cream, or berry syrup for a decadent touch.
- Store leftovers in the fridge for up to 1 week.
