Ingredients
- Fresh strawberries – 1 pound (about 450 grams)

- Graham cracker crumbs – 1/4 cup (30 grams), plus extra for topping
Instructions
- Rinse the strawberries under cold water and gently pat them dry with a paper towel. Carefully slice the tops off each strawberry and then cut them in half lengthwise. Use a small spoon or a melon baller to scoop out a little of the flesh from each half, creating a small cavity for the cheesecake filling. Set aside.
- In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, beat the mixture on medium speed until it is smooth and creamy, about 2-3 minutes. Make sure there are no lumps.
- Using a small spoon or a piping bag, fill each strawberry half with the cheesecake mixture. Be generous but avoid overfilling to prevent spillage.

- Place the filled strawberries on a baking sheet lined with parchment paper. Freeze them for at least 2 hours or until they are firm.
