Ingredients

  • Graham cracker crumbs – 1/4 cup (30 grams), plus extra for topping

Instructions

  1. Rinse the strawberries under cold water and gently pat them dry with a paper towel. Carefully slice the tops off each strawberry and then cut them in half lengthwise. Use a small spoon or a melon baller to scoop out a little of the flesh from each half, creating a small cavity for the cheesecake filling. Set aside.
  2. In a medium mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Using an electric mixer, beat the mixture on medium speed until it is smooth and creamy, about 2-3 minutes. Make sure there are no lumps.
  3. Using a small spoon or a piping bag, fill each strawberry half with the cheesecake mixture. Be generous but avoid overfilling to prevent spillage.
  4. Once all the strawberries are filled, sprinkle the tops with graham cracker crumbs for added texture and flavor.
