- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened

- 1/4 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1 ripe banana, sliced
- 1 cup heavy whipping cream
- 1/4 cup powdered sugar
- 1 teaspoon coconut extract (optional)
- Additional shredded coconut for garnish
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, combine the all-purpose flour, baking powder, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
- Mix in the egg and vanilla extract until well combined.
- Gradually add the flour mixture to the butter mixture, mixing until just combined. Fold in the shredded coconut.
- Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten each ball slightly.
- Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and coconut extract (if using), continuing to whip until stiff peaks form.
- Once the cookies are cooled, spread a generous amount of whipped cream filling on the flat side of one cookie, top with banana slices, and place another cookie on top to create a sandwich.
- Freeze the assembled sandwiches for at least 2 hours, or until firm.
- Serve immediately after removing from the freezer, optionally rolling the edges in additional shredded coconut.

- Store leftovers in an airtight container in the freezer for up to a month.
- Allow sandwiches to sit for a few minutes before serving for easier biting.
- For a more intense coconut flavor, consider using coconut cream in the filling.
