A delightful treat that combines creamy coconut filling with the natural sweetness of bananas, perfect for warm days or any sweet craving.

  • 1 cup shredded coconut (sweetened or unsweetened, as preferred)
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 ripe banana, sliced
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 teaspoon coconut extract (optional)
  • Additional shredded coconut for garnish

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, combine the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the flour mixture to the butter mixture, mixing until just combined. Fold in the shredded coconut.
  6. Drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart, and flatten each ball slightly.
  7. Bake for 10-12 minutes, or until the edges are golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  8. In a medium bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and coconut extract (if using), continuing to whip until stiff peaks form.
  9. Once the cookies are cooled, spread a generous amount of whipped cream filling on the flat side of one cookie, top with banana slices, and place another cookie on top to create a sandwich.
  10. Freeze the assembled sandwiches for at least 2 hours, or until firm.
  11. Serve immediately after removing from the freezer, optionally rolling the edges in additional shredded coconut.
