Ingredients

  • 1/4 cup of lime juice (freshly squeezed)
  • 1 tablespoon of lime zest (fresh)
  • 1/2 cup of powdered sugar
  • 1 cup of graham cracker crumbs
  • 1/2 cup of shredded coconut (toasted for garnish)
  • Pinch of salt (to taste)

Instructions

  1. Prepare the crust by mixing graham cracker crumbs and a pinch of salt, then press into a mold and freeze.
  2. Make the filling by beating cream cheese, coconut cream, lime juice, lime zest, and powdered sugar until smooth.
  3. Assemble the bites by spooning the filling over the crust in the molds.
