- Pinch of salt (to taste)
Instructions
- Prepare the crust by mixing graham cracker crumbs and a pinch of salt, then press into a mold and freeze.
- Make the filling by beating cream cheese, coconut cream, lime juice, lime zest, and powdered sugar until smooth.
- Assemble the bites by spooning the filling over the crust in the molds.
- Freeze the filled molds for at least 4 hours until firm.
- Toast the shredded coconut in the oven until golden brown.
- Remove the bites from the molds and roll in toasted coconut.
- Serve immediately or store in an airtight container in the freezer.
