Description

Frozen Coconut Water Pops are a refreshing and healthy treat perfect for hot summer days, bursting with the natural sweetness of fresh fruits and hydrating coconut water.


Ingredients

  • 2 cups coconut water
  • 1 cup fresh mango, diced
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh kiwi, diced
  • 1 cup fresh blueberries
  • 2 tablespoons honey (adjust based on sweetness preference)
  • 2 tablespoons freshly squeezed lime juice

Instructions

  1. Wash and prepare all the fresh fruits. Dice the mango, slice the strawberries, and dice the kiwi. Keep the blueberries whole for added texture.
  2. In a mixing bowl, combine the coconut water, honey, and lime juice. Stir well until the honey is fully dissolved.
  3. In each popsicle mold, start by adding a layer of diced mango at the bottom. Follow with a layer of sliced strawberries, then diced kiwi, and finally a layer of blueberries.
  4. Carefully pour the coconut water mixture over the layered fruits in each mold, ensuring that the fruits are submerged but still visible.
  5. Place the popsicle sticks into the molds, ensuring they are centered and upright.
  6. Transfer the molds to the freezer and freeze for at least 4-6 hours, or until completely solid.
  7. To remove the popsicles, run warm water over the outside of the molds for a few seconds to loosen them.
  8. Enjoy the vibrant and refreshing fruit pops immediately, or store them in a zip-top bag in the freezer for later enjoyment.
