A refreshing and healthy frozen treat made with hibiscus and raspberries, perfect for warm days.


Ingredients

  • 2 cups Greek yogurt (plain or vanilla)
  • 2 tablespoons dried hibiscus tea
  • 1 cup fresh raspberries (washed and dried)
  • 2 tablespoons honey (adjust to taste)
  • 1/4 cup pistachios (shelled and roughly chopped)

Instructions

  1. Prepare the hibiscus infusion by boiling water, steeping the dried hibiscus tea, and straining it.
  2. Mix the Greek yogurt with the cooled hibiscus tea and honey in a bowl.
  3. Line a baking sheet with parchment paper.
  4. Spread the hibiscus yogurt mixture evenly on the baking sheet.
  5. Add the fresh raspberries on top of the yogurt layer.
  6. Sprinkle chopped pistachios over the raspberries.
  7. Freeze the baking sheet for at least 4 hours until solid.
  8. Cut or break the frozen yogurt bark into pieces and serve.

Notes

  • For a dairy-free option, use coconut or almond yogurt.
  • Maple syrup can replace honey for a vegan alternative.
  • Other berries can be used instead of raspberries.
  • Store in an airtight container in the freezer for up to two weeks.
