Description

Frozen Lemon S’mores combine the tartness of lemon pudding with the sweetness of marshmallow cream, layered between crisp graham crackers for a refreshing, creamy, and crunchy summer dessert perfect for gatherings and year-round enjoyment.

  • 12 sheets graham crackers
  • 6.8 ounces instant lemon pudding (two boxes of 3.4 ounces each)
  • 3 1/4 cups milk
  • 8 ounces whipped topping (like Cool Whip), divided and thawed
  • 5 ounces cream cheese
  • 7 ounces marshmallow cream

Instructions

  1. Line a 9×13 baking dish with parchment paper.
  2. Break graham crackers into 12 squares and arrange evenly in the pan as the base.
  3. Mix lemon pudding mix, milk, and 1/2 cup whipped topping until smooth; spread evenly over graham crackers. Freeze for 15 minutes.
  4. In a separate bowl, blend cream cheese and marshmallow cream until smooth; fold in remaining whipped topping gently.
  5. Spread the cream cheese mixture evenly over the pudding layer, then layer remaining graham crackers on top.
  6. Cover tightly with aluminum foil and freeze for at least 6 hours or overnight until solid.
  7. Remove from freezer, peel off parchment paper, cut into 12 pieces along graham cracker lines, and serve immediately or store frozen.
