- 1/2 cup (60 g) powdered sugar
- 1/4 cup (60 ml) freshly squeezed lemon juice
- 1 tablespoon lemon zest (from about 1 lemon)
- 1 cup (240 ml) whipped cream, plus extra for topping
- 1 cup (100 g) graham cracker crumbs
- 4 tablespoons (56 g) unsalted butter, melted
- Fresh mint for garnish
Instructions
- In a medium bowl, combine the graham cracker crumbs and melted butter. Mix until the crumbs are evenly coated. Divide the mixture evenly among the bottom of your jars, pressing it down gently to form a crust layer.
- In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar, mixing until well combined.
- Pour in the lemon juice and lemon zest, continuing to mix until the filling is smooth and fluffy. Gently fold in the whipped cream until fully incorporated.
- Spoon the cheesecake filling over the graham cracker crust in each jar, filling them about three-quarters full. Smooth the tops with a spatula.
- Place the jars in the freezer for at least 4 hours or until the cheesecake is firm. For best results, allow them to freeze overnight.
- When ready to serve, remove the jars from the freezer and let them sit at room temperature for about 10 minutes to soften slightly. Top each jar with a dollop of whipped cream, a sprinkle of lemon zest, and a sprig of fresh mint for garnish.
