  • 3/4 cup granulated sugar (divided)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup whipped cream (for topping)

Instructions

  1. Prepare the crust by combining graham cracker crumbs and melted butter, then press into a 9×9-inch baking dish and refrigerate.
  2. Make the cheesecake filling by beating softened cream cheese and gradually adding 1/2 cup of sugar, then mix in vanilla extract.
  3. Incorporate the mango puree into the cream cheese mixture until well blended.
  4. Pour the cheesecake filling over the prepared crust and smooth it into an even layer. Spoon the mango puree on top in dollops or lines, then use a skewer or knife to gently swirl it into the cheesecake.
  5. Freeze the bars for at least 4 hours until firm.
