Description
Frozen mango lassi bars are a refreshing dessert that combines yogurt and mango, inspired by the traditional Indian drink lassi.
Ingredients

- 2 large ripe mangoes (about 2 cups, peeled and diced)
- 1 cup Greek yogurt (plain or vanilla)
- 1 cup coconut milk (canned or carton)
- 1/4 cup honey or maple syrup (adjust based on sweetness preference)
- 2 tablespoons fresh lime juice
- 1/2 teaspoon ground cardamom (optional)
- 1/4 cup crushed pistachios (for topping)
Instructions
- Prepare the mangoes by peeling and dicing them, then place in a blender.
- Blend the mangoes with Greek yogurt, coconut milk, honey (or maple syrup), lime juice, and ground cardamom until smooth.
- Pour the mixture into ice pop molds, filling them about 3/4 full.
- Sprinkle crushed pistachios on top of each filled mold if desired.
- Insert sticks into the center of each bar.
- Freeze for at least 4-6 hours, or until solid.
- To unmold, run warm water over the outside of the molds and gently pull the bars out.
- Serve immediately, garnished with additional crushed pistachios if desired.
Notes
- For a dairy-free option, use coconut yogurt instead of Greek yogurt.
- Maple syrup can be swapped with agave nectar for a vegan alternative.
- Ensure the mangoes are ripe for the best flavor.
- Store leftovers in an airtight container in the freezer.
