Instructions

  1. In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until the crumbs are evenly coated and resemble wet sand.
  2. Line an 8×8 inch (20×20 cm) baking dish with parchment paper for easy removal. Press the graham cracker mixture firmly into the bottom of the dish to form an even layer. Place the crust in the freezer while you prepare the cheesecake filling.
  3. In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy. Gradually add the powdered sugar and vanilla extract, mixing until well combined.
  4. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
  5. Fold in the crushed pineapple, ensuring it is evenly distributed throughout the cheesecake mixture.
  6. Pour the cheesecake filling over the prepared graham cracker crust, spreading it evenly with a spatula. Cover the dish with plastic wrap and freeze for at least 4 hours, or until firm.
  7. Once frozen, remove the cheesecake from the dish using the parchment paper. Cut into squares.
  8. Top each square with a dollop of whipped cream, a sprinkle of toasted coconut flakes, and a few pineapple chunks for added color and flavor.
