Description

Frozen raspberry yogurt clusters are a delightful and healthy snack made with fresh raspberries and creamy yogurt, offering a perfect balance of sweetness and tanginess.


Ingredients

  • 2 cups fresh raspberries
  • 1 cup Greek yogurt (plain or vanilla)
  • 2 tablespoons honey (plus extra for drizzling)
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt (to taste)

Instructions

  1. Rinse the fresh raspberries under cold water and gently pat them dry with a paper towel. Set aside a few whole raspberries for garnish if desired.
  2. In a blender or food processor, combine the fresh raspberries, Greek yogurt, honey, vanilla extract (if using), and a pinch of salt. Blend until smooth, leaving some small raspberry pieces for texture if preferred.
  3. Line a baking sheet with parchment paper. Using a spoon or a small cookie scoop, drop spoonfuls of the raspberry yogurt mixture onto the prepared baking sheet, shaping them into small mounds.
  4. Place the baking sheet in the freezer and allow the clusters to freeze for at least 2-3 hours, or until completely solid.
  5. Once frozen, remove the clusters from the freezer and drizzle a little extra honey over the top of each cluster if desired.
  6. Carefully transfer the frozen raspberry yogurt clusters to a serving plate. Garnish with reserved whole raspberries if desired and enjoy immediately or store in an airtight container in the freezer for later.
