Description

Deliciously easy frozen strawberry cheesecake cones that combine creamy cheesecake with refreshing strawberries, perfect for hot summer days or any occasion.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and diced
  • 1 cup graham cracker crumbs
  • 4 standard-size waffle cones
  • Strawberry sauce for drizzling (store-bought or homemade)

Instructions

  1. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Use an electric mixer to beat the mixture until smooth and creamy, ensuring there are no lumps.
  2. In a separate bowl, pour in the heavy cream. Using a clean electric mixer, whip the cream until stiff peaks form.
  3. Gently fold the whipped cream into the cream cheese mixture until smooth and pale pink.
  4. Place a layer of graham cracker crumbs at the bottom of each waffle cone, about 2 tablespoons per cone.
  5. Spoon a layer of the cheesecake filling over the graham cracker crumbs, filling the cone about halfway.
  6. Sprinkle a layer of diced fresh strawberries on top of the cheesecake filling.
  7. Continue layering with more cheesecake filling and strawberries until the cones are filled to the top.
  8. Drizzle strawberry sauce over the top of each parfait cone.
  9. Place the filled parfait cones in the freezer for at least 2 hours to set.
  10. Once set, remove the parfait cones from the freezer and serve immediately.

Notes

  • Store leftover cones in an airtight container in the freezer.
  • Let cones sit at room temperature for a few minutes before serving if they are too hard.
  • These cones can be made a day in advance.
