- 8 oz cream cheese, softened
- 1 cup fresh strawberries, hulled and chopped
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- 1 cup graham cracker crumbs
- 4 tablespoons unsalted butter, melted
Instructions
- In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Beat until smooth and creamy.
- Gently fold in the chopped fresh strawberries.
- In a separate bowl, mix the graham cracker crumbs with the melted butter.
- Spoon a layer of the graham cracker mixture into the bottom of each popsicle mold, then fill with the strawberry cheesecake mixture.
- Add another layer of the graham cracker mixture on top.
- If your molds have a lid, place it on top. If not, insert popsicle sticks.
- Freeze for at least 4-6 hours, or until solid.
- Run warm water over the molds to release the pops and enjoy!
Notes
- For a dairy-free option, use cashew cream instead of cream cheese.
- For a healthier option, use Greek yogurt instead of cream cheese.
- Store leftovers in an airtight container in the freezer.
