Description

A refreshing and creamy treat perfect for summer, combining sweet strawberries and rich cheesecake flavor.


Ingredients

  • 8 oz cream cheese, softened
  • 1 cup fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 cup graham cracker crumbs
  • 4 tablespoons unsalted butter, melted

Instructions

  1. In a medium bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Beat until smooth and creamy.
  2. Gently fold in the chopped fresh strawberries.
  3. In a separate bowl, mix the graham cracker crumbs with the melted butter.
  4. Spoon a layer of the graham cracker mixture into the bottom of each popsicle mold, then fill with the strawberry cheesecake mixture.
  5. Add another layer of the graham cracker mixture on top.
  6. If your molds have a lid, place it on top. If not, insert popsicle sticks.
  7. Freeze for at least 4-6 hours, or until solid.
  8. Run warm water over the molds to release the pops and enjoy!

Notes

  • For a dairy-free option, use cashew cream instead of cream cheese.
  • For a healthier option, use Greek yogurt instead of cream cheese.
  • Store leftovers in an airtight container in the freezer.
